  1. Brewing Is Dissolving. Brewing is using hot water to dissolve a specific fraction of a coffee bean, and almost every flaw in your cup is dissolving too little or too much.
  2. Beans Are the Ceiling. The coffee you buy sets the maximum quality of your cup, and freshness matters more than any gear you own.
  3. Grind Size, Your Main Dial. Grind size controls how fast coffee dissolves, which makes it the single most powerful and most adjustable variable you have.
  4. Ratio and the Scale. Brew ratio is the weight of coffee to the weight of water, and weighing both is what turns lucky cups into repeatable ones.
  5. Water Does the Work. Water is over 98 percent of your cup, and its temperature and mineral content strongly affect how much flavor it can pull out.
  6. Method and Technique. Each brewing method is just a different way of managing contact time, agitation, and filtration, and technique is how you keep the coffee bed even.
