  1. Know Which Rice You Bought. The variety of rice you buy decides the texture you can get, because grain length tracks the ratio of the two starches inside.
  2. Rinsing and Soaking. Rinsing washes away loose surface starch and milling dust so grains do not glue together, and soaking pre-hydrates the grain so it cooks more evenly.
  3. The Absorption Ratio. In the absorption method you add exactly the water the rice will drink plus what your pot will lose to steam, which is why measuring beats eyeballing.
  4. Heat, Lid, and Silence. Once the water boils, rice cooks in trapped steam at low heat, so a tight lid and no stirring are the whole job.
  5. The Rest and the Fluff. Ten minutes off the heat with the lid on lets moisture redistribute from wet bottom grains to drier top grains, and only then do you fluff.
