- What Fermentation Actually Is. Vegetable fermentation is controlled spoilage: salt and the absence of air let lactic acid bacteria already living on the vegetables outcompete everything else and turn sugars into lactic acid.
- Salt by Weight, Not by Spoon. Salt concentration is measured as a percentage of the total weight of vegetables plus water, and roughly 2 percent is the reliable starting point for most vegetables.
- Keeping Everything Under the Brine. Fermentation happens without oxygen, so every piece of vegetable must stay submerged beneath the liquid and the jar must be able to release its own carbon dioxide.
- Temperature, Time, and Reading the Signs. Temperature sets the speed and flavor of a ferment, and you judge doneness by taste and smell rather than by a fixed number of days.
- Dry-Salted Versus Brined. Two methods cover almost everything: dry-salt shredded vegetables so they make their own brine, or submerge whole and chunky vegetables in a salt-water brine you mix yourself.
- Safety and Troubleshooting. A healthy ferment smells sour and clean and stays under brine, and the few real problems, mainly fuzzy mold and mushiness, are recognizable and preventable.
- Flavoring, Storing, and Designing Your Own. Once the fermentation is sour enough, cold storage slows it almost to a stop, and from there you can design your own combinations with confidence.
